		<description>Hi, I was running a little research about this until I ended up on this because I have just had for dinner some salad which had bluish-green minced garlic in it.. My mom prepared for dinner what she calls chayote (or choko in Australia) salad, where she cuts this weird fruit or vegetable in cubes then cooks it on water until soft, then still warm she adds minced garlic, lemon juice, olive oil and salt and after a couple minutes there they are, blue garlic! And this happens every time! I always knew this was a chemical reaction and always trusted on the acid theory..
Now after all the curiosity, I have added a pinch of baking soda directly over the blue garlic and guess what? No color change! The garlic remained the mysterious blue color.
Hope we can get someone reproduce the experiment and get more results! Thank you all.</description>
