Commercial hummus makes me crazy. It’s expensive, chalky, and usually tastes of neither tahini nor chickpeas. So, I make my own. You can too, for about a third of the price of prepared hummus.
Basic Homemade Hummus
1 1/2 c. dried chickpeas (about $0.70 if you buy in bulk)
3 T or so tahini, to taste (about $0.25, [...]
Inspired by Mark Bittman’s dictum to eat whole grains, everyday, I mixed this with bulgar for a hearty, healthy, meal. You’ll note that I didn’t say “attractive.” While tasty and nutritious, the look of the final product can only be described as Moosewood circa 1982:
This is a classic, “Hmmm, there’s nothing to eat in my house. But I want a salad. What to do?” kind of dish. You’ll note that I don’t call it “slaw,” because in my mind, “slaw” contains green cabbage and lots of mayonnaise. Since this is based on a vinaigrette and whatever happens to be [...]
I just made a batch of egg salad and something is seriously wrong. I can only describe the texture as furry. The eggs are fresh from the farm yard, so that’s not the problem. The only ingredients are eggs, mayonnaise, salt, pepper, and majoram. I added some vinegar and mustard and that helped, but just [...]
Spring is finally here! Is there any dish that’s more springlike than a simple combination of leeks and peas? It’ll get even better in about three weeks when the peas come from the garden instead of the freezer, but even this version feels like a celebration of renewal.
Fresh ricotta is a wonderful, underappreciated ingredient. If you can find rennet, it’s easy enough to make yourself, but in Philadelphia we are blessed with Claudio’s, a glorious cheesemaker that sells fresh ricotta for the bargain basement price of $2.99 a pound. (Oddly enough, they don’t mention the fresh cheese on their Web site, [...]
Everybody’s been talking about Mark Bittman’s new plan to be vegan until dinnertime. Suddenly, he’s all about stocking your refrigerator with whole grains like barley, quinoa, and spelt, and snacking on them all week. Poor guy—no one seems to have told him that couscous isn’t really a whole grain. The thing is, he’s making it [...]
This soup is not unlike a liquid hummus. Depending on your preferences and what you have on hand, you can make it vegan or with chicken stock; with or without parsley; and lumpy or smooth. I use the pressure cooker both because the texture of the “sauce” in canned beans creeps me out and because [...]
Put this one in the tastier-than-it-looks category. We have an overabundance of carrots, thanks to the CSA, and an ample supply of yogurt, thanks to the trusty yogurt machine. Thus, carrot yogurt salad.
Carrot Yogurt Salad
5 or 6 large carrots, or as many as you feel like using
a cup of yogurt, more or less
2 or 3 [...]
So truly, you want tasty and fast bread that looks all artisan-y and spendy. Me too. I like expensive bread. I especially like it now that I love hundreds of miles away from being able to purchase this bread. Having moved to the land of 79 cent white bread two years ago, we always knew [...]
